Clementine and Clove Marmalade
Spiced Winter Sunshine in a Jar
Yield: 1 (8 ounce) jar
Ingredients
- 4 clementines (about 1 cup of clementine segments)
- 1/2 cup granulated sugar
- 1/4 cup water
- 3-4 whole cloves
- Pinch of salt
Instructions:
1. Prepare the Ingredients:
Peel the clementines and separate them into segments. Remove any seeds and excess pith. You should have about 1 cup of clementine segments.
2. Slice and Chop the Clementines:
Thinly slice the clementine segments and then finely chop them. Place the chopped clementines in a bowl and set aside.
3. Combine Ingredients:
In a medium-sized saucepan, combine the chopped clementines, granulated sugar, water, whole cloves, and a pinch of salt.
4. Simmer and Cook:
Place the saucepan over medium heat and bring the mixture to a boil. Stir well to dissolve the sugar.
5. Reduce Heat:
Reduce the heat to low and let the mixture simmer, uncovered, for about 30-35 minutes, or until the marmalade thickens. Stir occasionally to prevent sticking.
6. Remove Cloves:
After simmering, remove the whole cloves from the marmalade using a slotted spoon.
7. Test for Consistency:
To check if the marmalade has reached the desired consistency, place a small amount on a cold plate and tilt it. If it wrinkles and doesn't run, it's ready. If not, continue to simmer for a few more minutes and retest.
8. Cool and Store:
Allow the Clementine and Clove Marmalade to cool slightly. Transfer it into a clean, sterilized 8-ounce jar. Seal the jar with a lid and let it cool to room temperature before refrigerating.

The total calorie count for the entire 8-ounce jar of Clementine and Clove Marmalade is approximately 300-350 calories, depending on the specific ingredients used.
